Superfood Summer Salad
This delicious summer salad is packed with protein and superfoods. For those of you meat eaters out there, you can add grilled chicken or salmon for an extra hit of protein.
Ingredients
- Kale 100g
- Avocado x 2
- Fresh beetroot 250g
- Pumpkin seeds
- Quinoa- Mixed grain
- Olive oil
- Wholegrain mustard
- Honey
- 1 large salad bowl
Prep time 20 mins
Method
- Measure 1 cup of quinoa to 2 cups of water
- Place quinoa into a saucepan. Cover with the water and bring to the boil, adding a pinch of salt and pepper
- Bring the saucepan to simmer for 15 minutes as the quinoa cooks, intermittently stirring
- Wash kale and place in large salad bowl
- Throw 5 Tbsp pumpkin seeds into the large salad bowl
- Chop the beetroot and avocado and add to the salad
- Drain quinoa in a colander and run cold water over it, add to salad
- Mix thoroughly
Dressing
- 1 Tspn of wholegrain mustard into jug
- 5 Tbsp of olive oil
- Big squeeze of runny honey
Mix together and pour over the salad. Mix with hands to ensure ingredients are covered (add more dressing to enhance taste)
